To extract the raw organic coconut oil, we first press the fresh, white flesh of the coconut to get a coconut cream or milk. After shelling the coconut, it takes less than 45 minutes to produce the cream. This cream is approximately 40% oil. We closely monitor the temperatures of the coconut flesh and the resulting coconut cream emulsion to ensure they do not exceed 120° F.
Next, we separate this coconut cream into its oil and water components with the help of centrifuges. Several passes through different centrifuges are needed to isolate pure and organic extra virgin coconut oil, but the result is fabulous!
Lastly, a slight vacuum is placed on the coconut oil to remove any remaining traces of moisture. After removing all the moisture, manufacturers package the oil into new food-grade stainless steel drums for shipment to the US. Raw coconut oil is generally as clear as spring water when it’s in a liquid state and pure white when it’s in a solid state.
